What you'll do

Explore a farm and follow your food's journey to the table

Mediterráneo Havana is a one of the most renowned restaurants in the city. One reason is that it gets most of its products directly from a farm, Vista Hermosa, which is part of a larger project. We'll visit Vista Hermosa to learn about the processes and ecological practices used there. We'll taste cheeses and artisan sausages. We'll make a tour of the farm by ride a horse or by cart. Then we'll head back to Mediterráneo, where you'll enjoy a tasting menu made of these local products. We include transportation to go to the farm and return to the restaurant, it is not necessary to pay for it.

Vista Hermosa farm belongs to the Slow Food International movement, working intensely on the production of organic crops without chemicals or fertilizers of any kind and for its effort to keep the culinary traditions of Cuba alive. Products such as Nabacoa cheese, which is made in the farm, is part of the Arca del Gusto, a catalog of products that belong to the culture and traditions of the world, in danger of disappearing. The strong commitment to quality and excellence, make Vista Hermosa a project of high impact on local culture.

We'll meet at the Mediterráneo Havana restaurant. From here we'll travel to the Vista Hermosa farm, where the restaurant's ingredients are grown. Then we head back to the restaurant, where you'll chat with the chef over a meal.

We had such a wonderful time visiting the farm and sharing a meal with our host. I loved being able to see how they are doing sustainable food production and permaculture farming in Cuba and learning about how the politics of Cuba can effect everything. Our guide was very knowledgeable and professional and I'd recommend this activity to anyone interested in sustainable food production/ slow food. Easily one of the best meals we had on our trip.

This is the only farm-to-table experience in Havana and is well worth it. We rode to the farm in a 1953 Chevy, ate fresh fruit picked and prepared that morning, saw how cheese and meat is made/processed and then returned to the restaurant in Vedado, where we had the best meal of our whole time in Cuba. It was delicious and the entire experience was delightful.

As a farmer I was very excited for this experience- and it didn’t disappoint. Vista Hermosa is a wonderful permaculture farm doing important work. Kensys was a fantastic guide that I truly liked- his knowledge and life experiences were fascinating. After touring the farm, sipping a cocktail made of sugar cane juice, and riding a horse up to the lookout we returned to the city for lunch comprised mostly of ingredients from the farm. It was one of the best meals I had in Havana. I’d highly recommend this experience.

I had such a great time! Kensys went out of his way to make sure I had a really unique experience and his knowledge is excellent. The farm tour and learning and tasting sessions were wonderful. We learned a great deal about organic and sustainable farming and out host was very approachable and knowledgeable. I was slightly disappointed that there weren’t more vegan/vegetarian options at the restaurant, given the wonderful produce available at the farm, but that may be more a result of veganism not being widespread in the country yet. However, our hosts were very welcoming and we enjoyed the experience immensely.
