What you'll do

We will visit an authentic dairy company in the countryside of Locorotondo and here we will see the production of some dairy products such as mozzarelle, burrate and scamorze cheese.

At the end of the demonstration we will taste the dairy products.

Hi, I am Antoniana, apulian tour guide.
My soul is certainly due to the location in which I live.
I live in a corner of the Itria Valley, in the central area of Puglia, where nature is a succession of red earth, white stone, olive groves and vineyards.
I love to regenerate myself and take a break on foot or by bike immersed in my nature which will also be a little yours from today.

A really interesting and fun experience learning about how mozerella is made. Seeing the two cheese makers was a highlight. The guide was super lovely and very welcoming. She had a vast knowledge, and brought in the knowledge of the makers seamlessly. We had a huge tasting, and left extremely full, and with a bag full of cheese to have for later. Do wrap up very warm though, as, in the evening, it gets very cold!!

Antoniana is a professional tour guide, with extreme passion for delivering a holistic experience to her guests. She goes above and beyond. We did not just learn about cheese (we saw live cheese making) but also about the entire area - its history, culture, various agricultural fiefdoms, people, and businesses. She is kind, friendly, and has a great ability to make you feel like you are the only one there instead of with a group. I felt this was a very special experience to learn more about cheese making by hand. We observed them making ricotta, mozzarella, and burrata. The best part was tasting a BIG selection of cheeses. Come hungry!!! Everyone was very friendly and proud of their art.

We really enjoyed watching the artisans make and shape mozzarella cheese, it was fascinating to understand how it is made. Also, we were able to look around an ancient Trullo and see how cosy it was. Our guide, Antoniana, was a very friendly person who had a wide knowledge of the area and of the mozzarella production process.
